The tartness of the dill in the yogurt in this recipe compliments the sweetness of the grilled fish. I prefer to use Halibut or Sole, but any thin fillets will do. A few good choices are Trout, Tilapia or Pickerel (Walleye).

Grilled Chicken Skewers with Homemade Tzatziki Sauce

These skewers are economical and simple to make, but the homemade Tzatziki sauce makes them taste like a million bucks. This recipe will make 10-12 skewers, depending on the size of the chicken breast. The sauce should be made several hours ahead as you will need to drain the Yogurt to thicken it.

Homemade Ranch Dressing

In our house we use this dressing for just about everything. We use it as a dip for French-fries, crispy wings and raw vegetables. Sometimes we even use it on the salad.

Spinach, Mushroom and Tomato Risotto

I use Arborio rice in this recipe because it is extra starchy and results in an extra creamy Risotto. Regular rice can be substituted, but you will not get the same texture. Arborio rice has a firm interior like long grain rice, while the exterior is soft and creamy like a short grain.
