Spicy Vegetarian Jambalaya

Traditional Jambalaya may be made with chicken, beef, pork, shrimp, crayfish, sausage, oysters duck or any combination. Even without meat this dish is a crowd pleaser. Try doubling the recipe and keeping it warm in a crock pot for guests at a get together.
