Twisted Lentil Soup

The reason I call this recipe “twisted” is because although I love lentil soup, I am not a big fan of lamb. Years ago I took a traditional lentil soup recipe and twisted it around to better suit my tastes. The result was delicious.

Ingredients

  • 1 large Beef Shank
  • 2 tbsp Olive Oil
  • ½ cup chopped Celery
  • 2 cloves minced Garlic
  • 1 large chopped Onion
  • ½ cup Tomato Sauce
  • 2 cups dry Lentils
  • 5 cups water
  • 5 cups Beef Stock
  • 1 tsp Curry Powder
  • 1 tsp Cumin
  • Salt and Pepper
  • Plain Yogurt
  • Finely chopped Cilantro

Method

    1. Brown Beef shank in oil in a heavy pan, remove and set aside
    2. Saute celery, onions, garlic
    3. Combine all ingredients and simmer for aprox 1 hour or until tender
    4. Remove beef from the bone, cut into small pieces and return to soup
    5. Serve hot topped with a spoonful of yogurt and a sprinkle of chopped cilantro

      I think the twisted version sounds good too. It is on my list for the crock pot.

      Thanks everyone for your comments. Lentils are great things aren`t they? Not only are they nutritious but they are great to use when you are on a tight budget.
