Twisted Lentil Soup |

The reason I call this recipe “twisted” is because although I love lentil soup, I am not a big fan of lamb. Years ago I took a traditional lentil soup recipe and twisted it around to better suit my tastes. The result was delicious. |
Ingredients- 1 large Beef Shank
- 2 tbsp Olive Oil
- ½ cup chopped Celery
- 2 cloves minced Garlic
- 1 large chopped Onion
- ½ cup Tomato Sauce
- 2 cups dry Lentils
- 5 cups water
- 5 cups Beef Stock
- 1 tsp Curry Powder
- 1 tsp Cumin
- Salt and Pepper
- Plain Yogurt
- Finely chopped Cilantro
Method- Brown Beef shank in oil in a heavy pan, remove and set aside
- Saute celery, onions, garlic
- Combine all ingredients and simmer for aprox 1 hour or until tender
- Remove beef from the bone, cut into small pieces and return to soup
- Serve hot topped with a spoonful of yogurt and a sprinkle of chopped cilantro
