The Coconut Red Bean Soup

Try this delicious and nutritious coconut red bean soup.

Ingredients:

  • 500 gram of red beans
  • 100 gram of granulated sugar
  • A pot of clean water
  • Three pieces of Pandan leave (can be substituted with dried organic orange peel) with a length of 9cm each
  • 50milliliter of concentrated coconut milk

Methods:

  1. Rinse the pandan leaves and red beans in a pot with clean water
  2. Repeat step 1 a few times till they are completely cleaned
  3. Fill the pot with the right amount of water
  4. Put in red beans and pandan leaves into a pot of clean water
  5. Heat the pot on the stove and keep it to boil
  6. Turn to medium fire
  7. Open the cover slightly to avoid the red bean soup from flowing out
  8. Let it cooks till the red bean split open
  9. Add in the sugar and stir until the sugar is dissolved thoroughly
  10. Pour the red bean soup into a big container
  11. Add in the coconut milk on top of the soup
  12. Stir the soup so that the coconut milk is mixed evenly
  13. Take out the pandan leaves
  14. The soup is best to serve hot
