Tarator

Tarator is a kind of a delicious cold soup. The most important from the ingredients is the yogurt which is very healthy and suitable for some diseases.

This is one of the most preferred Bulgarian soups during the hot summer days but it could be eaten during the whole year. Tarator is the name of a popular cold soup. It is one of the masters of the Bulgarian cuisine. The first and the most important rule for preparing this cold soup is to have fresh ingredients. Why the Bulgarian people eat this unusual delicious soup?! It is so because the soup is not only tasty but also it is very healthy. The yogurt, this original Bulgarian specialty, has healthful qualities either it is made from cow`s or sheep`s milk. Yogurt is the best dilutant for antibiotics and helps after drinking alcohol. Yogurt also eases upset stomach after over-eating. This soup is a low-caloric food and can be used in all slimming diets.

The preparing of this popular starter is easy and does not take lots of time.

Ingredients:

  • 500 gr (thick) diluted yoghurt
  • 100-200 gr water (soda water is better)
  • 100 gr fresh cucumber
  • 10 gr vegetable oil
    salt
  • (Vinegar)- not necessary but if you prefer, it could taste better
    5 gr dill
  • 10 gr garlic (1-2 cloves of garlic)
  • 30 gr walnuts
  • 10-15 gr fresh parsley

Method:

Finely chop the cucumber and place it in a large bowl. Pour the yoghurt and add water. If you are pleased with the thickness you can add the vegetable oil and salt to taste.
To be much more tasty you can add small pieces of dill, garlic and walnuts. If you want you can add some vinegar. In some of the regions in Bulgaria it is possible to do this. The so prepared soup" Tarator" has to stay for at least half an hour in the fridge to be well cooled and after that it is ready to be served. If there is no time for putting it into the fridge, then put some ice cubes into the soup.

I'd really like to try this one, but tell me, can i substitute the walnuts, or would the soup then lose its flavour?

You can substitute the walnuts vut the taste will be a little bit different.
