Soup's On!: Chicken Gumbo Soup

Another way to deal with the leftover chicken from last night's dinner.

Ingredients

  • 1 chicken cut up in pieces 1 c. whole kernel corn
  • 2 C. diced potatoes 1 c. peas
  • 2 diced medium onions 1 c. diced carrots
  • 1 diced green peppers 1/4 c. whole grain rice
  • 1 c. diced okra 1/4 bay leaf
  • 2 c. drained tomatoes salt and pepper to taste
  • 1 tbsp. red pepper 2 tbsp. paprika

Method

Cover chicken with water and cook over medium heat until tender. Remove from bones and diced meat. Add water to make one gallon. Return to fire, to a slow simmer. To this, add potatoes, onions, green peppers, okra, tomatoes, corn, peas, carrots, rice, bay leaf, paprika and red pepper. Simmer until vegetables are tender. Add salt and pepper to taste. Serve with bread and butter. Then be prepared to call the fire department to put the fire out after it is eaten
