Smooth Harvest Vegetable Soup |

This recipe is nutritious, simple to make and freezes beautifully. |
Ingredients- 2 tbsp Butter
- 1 clove Garlic
- 3/4 cup chopped sweet Onion
- 3 Leeks chopped (white part only)
- 1 ½ cup cubed Potato
- 3 Parsnips chopped
- 1½ cups Butternut Squash
- 3 Carrots chopped
- 4 cups Chicken broth
- 1 cup milk or cream (depends on your diet)
- 1/4 cup dry white Wine
- Salt and fresh ground Pepper
- Finely sliced green onions
- Sour Cream or Creme Fraise
Method- In a large pan, melt butter over medium heat
- Add garlic, onion and leeks and cook until limp, stirring occasionally
- Add potatoes, parsnips, squash, carrots and chicken broth
- Cook over medium heat until vegetables are tender and allow to cool a little
- Blend with hand blender ( or blend in regular blender and return to pot) until smooth
- Add milk/cream and wine and continue cooking until hot
- Season with salt and pepper to taste
- Serve with a dollop of Sour cream/Creme fraise and sprinkle with chopped green onion
