Rich Pumpkin Soup
- ½ pumpkin
- 1-2 tsp crushed garlic
- 1 tsp fresh ginger
- 2 cups vegetable stock
- 2 cups water
- ¼ tsp salt
- Cream to taste and decorate (Optional)
- Pinch black pepper (Optional)
- Sprig or chopped parsley (Optional)
- Chopped Chives (Optional)
Method
- Wash and chop Pumpkin into quarters and add all ingredients except optional ingredients into a 2-3 liter microwave safe dish.
- Place in microwave and cook until tender:
Approximately 12 mins on medium high in 1000w microwave)
- Set aside to cool. When cool, place all ingredients into a blender/mixer, mix until smooth. More water can be added at this stage to bring it to a suitable consistency for your palette.
- Reheat in microwave and add all or any of the optional ingredients at this stage, prior to serving.
This can be served as a light meal with garlic bread.
