Rich Pumpkin Soup

A creamy rich pumpkin soup that is very healthy and so easy to make.

Rich Pumpkin Soup

  • ½ pumpkin
  • 1-2 tsp crushed garlic
  • 1 tsp fresh ginger
  • 2 cups vegetable stock
  • 2 cups water
  • ¼ tsp salt
  • Cream to taste and decorate (Optional)
  • Pinch black pepper (Optional)
  • Sprig or chopped parsley (Optional)
  • Chopped Chives (Optional)

Method

  1. Wash and chop Pumpkin into quarters and add all ingredients except optional ingredients into a 2-3 liter microwave safe dish.
  2. Place in microwave and cook until tender: Approximately 12 mins on medium high in 1000w microwave)
  3. Set aside to cool. When cool, place all ingredients into a blender/mixer, mix until smooth. More water can be added at this stage to bring it to a suitable consistency for your palette.
  4. Reheat in microwave and add all or any of the optional ingredients at this stage, prior to serving.

This can be served as a light meal with garlic bread.

That sounds like a pretty good recipe. I've never heard of pumpkin soup before.

It is delicious, definately worth a try if you like pumpkin,butternut or squash.

Pumpkin ! Love it. I like the garlic, ginger ingredients. We will have to try this. It shows that you certainly eat well.

I just went through my saved articles and here I am viewing
your Pumpkin soup, as it's a 'fall thing' for us! I love anything pumpkin, squash and root veggies especially when the season changes, and becomes cooler.

I go to visit my favorite pictures and see they are Gone!?
This was unexpected and I was baffled, I imagine you had your reasons for removing them. I will miss them and your input, you were our bright spot on Triond and if you have a link to another site if you moved your things I would love to know. If not, we wish all the Good luck you richly deserve.

I have not removed anything, I don't know what they are doing to my things. I think it may have something to do with making room for new writers!

Lucy,some of my "stuff" is gone too.I didn't know it would be deleted, and have not saved much. I wish I had done so now. Your pumpkin soup looks good.
