Easy to make, fresh vegetable soups, are the perfect way to get all those vitamins and minerals that we all need. They are perfect for children and busy adults because as well as tasting good, they give you the added bonus of knowing that you are eating healthy.
Ingredients
- One small, or half a large cauliflower
- Four or five large potatoes
- Two onions
- A little frying oil, or substitute
- Stock, or stock cubes
- Pepper and salt
Method
- Peel and chop the onion and fry lightly in the oil in a large, heavy saucepan.
- Peel and chop the potatoes and add them to the pan. Shake them in the oil so that they start to cook.
- Wash and chop your cauliflower and add it to the mixture.
- Add stock, or stock cubes and water, so that the vegetables are well covered.
- Boil for around thirty minutes. Then blend with a hand held blender, or if you don't have one, mash and beat with a fork.
- Add salt and pepper to taste.
Tips and Variations
- Use the basic method with onions but add carrots instead of cauliflower.
- You can also add a mixture of vegetables and leave it chunky instead of blending it down.
- Cauliflower soup is exceptionally good sprinkled with cheese and served with fresh bread.
