Prepare Yourself Delicious Soups

Try these delicious soups made from some lovely vegetables.

Fresh Corn Soup

Ingredients

  • ½ cup cooked corn
  • 3 cups of vegetable stock
  • 2 tablespoons plain flour
  • 2 tablespoons chopped celery
  • 1 chopped onion
  • 1 tablespoon butter
  • 2 cups milk
  • 2 teaspoons grated cheese
  • Salt, pepper and nutmeg powder to taste

Method

  1. Heat the butter in pan
  2. Add the onion and celery
  3. Sauté till the onions are transparent
  4. Stir in the flour and remove from the heat
  5. Add the stock and milk gradually
  6. Keep it in low flame for 5 minutes
  7. Add the corn, salt, pepper and nutmeg powder and simmer for 10 minutes
  8. Garnish with chopped celery and grated cheese and serve hot

 

Asparagus soup

Ingredients

  • 3 cups chopped asparagus
  • ½ cup chopped onions
  • ½ cup chopped potatoes
  • 1 cup low fat milk
  • 2 teaspoons low fat butter
  • Salt and pepper to taste

Method

  1. Heat butter in a pan and sauté the onions and potatoes for 4 minutes
  2. Add two cups of water
  3. Simmer till the potatoes are nearly cooked
  4. Add the asparagus and keep for two minutes
  5. Make it cool; then puree the mixture
  6. Add salt, pepper and cream and bring to boil
  7. Garnish with sautéed asparagus and serve hot
