Oatmeal Soup

A delicious thick soup called Kungi, normally eaten by Sri Lankans.

Portions in this recipe are measured for five servings.

Ingredients:

  • Oats (14 tablespoons)
  • Chicken (5 pieces)
  • One tomato (cut in to pieces)
  • 3 cloves of garlic
  • Salt (to taste)
  • ½ teaspoon of black pepper
  • ½ teaspoon of cumin powder
  • Pinch of yellow powder
  • Coconut milk (1/2 can) or 1 mug of fresh milk

Method:

  1. Boil chicken with tomato pieces, garlic (not crushed), salt, pepper, cumin powder and yellow powder.
  2. Once chicken is cooked, take chicken pieces out, and add oats to the remaining chicken stock. Then let oats boil within it for ten minutes.
  3. Separate chicken flesh from its bones and shred to small pieces.  Then add to cooked oats. Let it boil for 2-3 minutes.
  4. Add coconut/fresh milk. Let it boil for 3-4 minutes.
  5. Serve and eat.
