Mom`s Beef and Garden Vegetable Soup |

Swiss Chard and Cherry Tomatoes are so packed with nutrients and so easy to grow that I had to start coming up with ways to use them all during the growing season. This soup is delicious, nutritious and takes only 15 minutes to make. |
Ingredients- 1 large Onion peeled and chopped
- 2 large Carrots peeled and chopped
- 2 ribs of Celery chopped
- 2 small Zucchini chopped
- 2 cups leftover cubed Roast Beef
- 2 cups shredded Swiss Chard or Baby Spinach
- 3/4 cup halved Cherry Tomatoes
- 1 ½ liters Beef broth
- 1 clove Garlic
- 1 tsp each of dry Thyme and Basil
- Salt and Pepper to taste
Method- In a large pot, saute onion, carrot, garlic, zucchini and celery in a little oil until tender
- Add broth, cubed beef , Swiss chard and dried herbs and bring to a boil
- Reduce heat and cook until Chard is tender
- Stir in Cherry tomatoes, season to taste with salt and pepper and cook 2 minutes more before serving
