Lentil Soup

A soup for the cold weather.


The cold, dreary weather is really a misery. One can only comfort oneself with hot foods that bring warmth. Here is a recipe for lentil soup which is both filling and highly nutritious. Any kind of lentils can be used; I have chosen the red ones.

Ingredients

1 cup red lentils

2-3 chopped tomatoes

1 chopped onion

5 cups water

Salt, pepper to taste

5 tablespoons oil.

Method

Fry the chopped onion in a little oil until slightly golden in color. Add the tomatoes and cook on low heat for a few minutes. Add a little salt and black pepper according to taste, then add the lentils and fry for a few minutes. Pour in the water, cover pan and cook for an hour or until the lentils are well cooked.

Remove from the heat, pour into a bowl, garnish with coriander leaves and serve with bread
