Homemade Vegetable Beef Soup

Enjoy the taste of homemade vegetable beef soup fresh from your kitchen. It's easy with this super easy, 'no measure' reciepe. Adjust the soup to meet your likes and dislikes and impress everyone at the dinner table.

1 pound of hamburger
beef soup base
dried mixed vegetables
onion powder
sugar
thyme
pepper
canned tomatoes
parsley

Scramble fry your hamburger until crumbly and cooked. Drain and rinse grease off. Put in large soup pot or crock pot. Add enough water to equal the finished amount of soup you want. Add a heaping tablespoon of beef soup base for flavor. Put in your canned tomatoes – as much as you like. Add about a cup – or more for a bigger pot of soup - of dried mixed vegetables – remember they will swell as they dehydrate! Next add about half a teaspoon of onion powder – or you could add finely chopped fresh onion. Put in about half a teaspoon of granulated sugar to give the soup a richer taste. Add a shake or two of thyme and parsley then add pepper to taste.

This is a vegetable soup so add whatever vegetables you enjoy eating and as many tomatoes as you like.

Let the soup simmer for about an hour. Taste and adjust the herbs to your liking. You may need to add water as it boils off or is absorbed by the dried vegetables. I like to add water just before serving to cool and thin the soup.
