Homemade Minestrone Soup Recipe

Fall and winter are great months to make Minestrone soup as the weather begins to get colder. So to help you warm up is a recipe for a homemade minestrone soup.

Ingredients

  1. 4 cups of vegetable stock
  2. 6 cups of mixed vegetables of your choice (garden grown taste best)
  3. 1 can of Kidney beans
  4. 1 cup orzo pasta
  5. Various seasonings to taste.

Method:

Mix the vegetables in with the vegetable stock. Bring to boil, once it starts to boil bring to a simmer and let simmer for about 15 minutes. Add beans and pasta stir a few times to mix up ingredients then let simmer an additional 10-15 minutes until vegetables become soft. Add any additional seasoning.
