I prefer making soups at home instead of using them out of a can. It serves two purposes -
1. Its healthier and contains no preservatives
2. Its very very cost effective.
You will need :
4 cups non-fat dry milk
1 1/2 cup corn starch
1 tsp dried pepper powder
2 tsp onion powder
1 tsp dried powdered thyme
1 tsp dried powdered basil
A pinch of each - cinnamon and clove powder
What to do :
Combine all of the above ingredients and keep in an air tight container for use. When you need to prepare it, bring 2 ½ cups of water to boil and add ½ cup of the instant soup mix. Stir constantly so that no lumps are formed. Add finely chopped vegetable of your choice. (like mushrooms for a cream of mushroom soup, or you can make cream of celery soup , or broccoli, or chicken or sweet corn). Add salt to taste. Bring to boil while stirring occasionally. Serve hot with a little cheese sprinkled on the top. You may add a fresh thyme leaf for garnishing.
This soup can be used for any recipe calling for a canned 'cream of mushroom/celery/chicken' soup.
