Harvest Time Savory Cheese Soup |

A great starter for any holiday gathering. The enormously delightful cheese flavor accompanies the vegetables perfectly. |
Ingredients- Serves up to 4
- 1/4 cup all purpose flour
- 1/2 cup shredded carrots
- 1/2 cup chopped celery
- 1 1/2 cups shredded chedder cheese
- 1 can chicken broth
- 1/4 cup chopped onion
- 3 Tbsp butter
- 1/4 tsp salt
- 1/8 pepper
- 1/8 garlic powder
- 2 cups milk
Method- In a large saute pan, cook onions until tender
- Add flour, salt garlic powder, and pepper and stir until smooth
- Gradually add milk in a steady stream
- Cook over medium heat until bubbly and thick
- In a separate sauce pan, bring chicken broth to a boil.
- Add carrots and celery and simmer until vegetables are tender
- Add to milk mixture and stir until blended
- Add cheeses. Cook and stir until melted
- Garnish with scallions or chives and freshly cooked bacon pieces.
