Crocodile Soup |

This is basically just my version of chicken and vegetable soup that I named Crocodile Soup for my kids when they were small. |
Ingredients- 1 ½ tbsp Olive oil
- 3 cups chicken breast cubed
- 3 celery ribs sliced
- 1 medium onion chopped
- 1 cup sliced fresh mushrooms
- 1 cup diced tomatoes with the juice
- 2 liters chicken stock
- 1 small yellow zucchini quartered and sliced
- 1 large carrot quartered and sliced
- 1 small red pepper finely diced
- 2 cloves garlic
- 5-6 fresh basil leaves chopped
- chopped fresh flat leaf parsley
- 1 ½ -2 cups uncooked broad egg noodles
- Salt and pepper
Method- Saute cubed chicken garlic and onions in olive oil
- Transfer to a large pot or Dutch oven
- Add all ingredients except parsley and egg noodles
- Bring to a boil, then reduce heat and simmer until vegetables are tender
- Turn heat back up until soup boils slightly and add dry noodles
- Cook uncovered, stirring occasionally until noodles are el dente (cooked but firm)
- Serve with a sprinkle of chopped fresh parsley
