Crocodile Soup

This is basically just my version of chicken and vegetable soup that I named Crocodile Soup for my kids when they were small.

Ingredients

  • 1 ½ tbsp Olive oil
  • 3 cups chicken breast cubed
  • 3 celery ribs sliced
  • 1 medium onion chopped
  • 1 cup sliced fresh mushrooms
  • 1 cup diced tomatoes with the juice
  • 2 liters chicken stock
  • 1 small yellow zucchini quartered and sliced
  • 1 large carrot quartered and sliced
  • 1 small red pepper finely diced
  • 2 cloves garlic
  • 5-6 fresh basil leaves chopped
  • chopped fresh flat leaf parsley
  • 1 ½ -2 cups uncooked broad egg noodles
  • Salt and pepper

Method

    1. Saute cubed chicken garlic and onions in olive oil
    2. Transfer to a large pot or Dutch oven
    3. Add all ingredients except parsley and egg noodles
    4. Bring to a boil, then reduce heat and simmer until vegetables are tender
    5. Turn heat back up until soup boils slightly and add dry noodles
    6. Cook uncovered, stirring occasionally until noodles are el dente (cooked but firm)
    7. Serve with a sprinkle of chopped fresh parsley

      Dee, you asked my question, and Lanne, you answered it. Thanks. I love crock pots because I can continue to do what I love best -write! I love the ingredients you have in this. It sounds so nutritious and delicious. I'll have to go crocodile hunting. lol

      This soup can be made with anything that you like. I called it Crocodile Soup because of the way my 4 yr old son was gobbling it down...LOL
