Cold Cucumber Soup |

If you love the taste of cucumbers, you will enjoy the flavor of this soup. |
Ingredients- 2 Tablespoons butter

¼ cup chopped onion
-
2 cups diced, unpeeled cucumber

1 cup watercress leaves
-
½ cup finely diced raw potato
-
2 cups chicken broth
-
2 springs parsley
-
½ teaspoon salt
-
¼ teaspoon pepper
-
¼ teaspoon dry mustard
-
1 cup heavy cream
-
Chopped chives
Method-
In a saucepan, melt butter and cook onion until transparent.
- Add the remaining ingredients except the cream and chives.
- Bring this to a boil and simmer for 15 minutes.

Cool and puree in a blender.
- Taste for seasoning and then chill.
- Before serving, stir in the cream.

Garnish with the chopped chives.
