Cold Cucumber Soup

If you love the taste of cucumbers, you will enjoy the flavor of this soup.

Ingredients

  • 2 Tablespoons butter
  • ¼ cup chopped onion
  • 2 cups diced, unpeeled cucumber
  • 1 cup watercress leaves
  • ½ cup finely diced raw potato
  • 2 cups chicken broth
  • 2 springs parsley
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon dry mustard
  • 1 cup heavy cream
  • Chopped chives

Method

  1. In a saucepan, melt butter and cook onion until transparent.
  2. Add the remaining ingredients except the cream and chives.
  3. Bring this to a boil and simmer for 15 minutes.
  4. Cool and puree in a blender.
  5. Taste for seasoning and then chill.
  6. Before serving, stir in the cream.
  7. Garnish with the chopped chives.
