Cheese Soup

A great cheese soup recipe.

Ingredients:

  • Butter or margarine
  • Finely chopped onion
  • 1 pint hot white stock or vegetable water or plain water
  • 1/2 pint milk
  • flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp chopped parsley
  • -Grated stale cheese
  • crushed cream cracker crumbs

Method:

  1. Heat fat in soup pan, add the onion and fry until transparent but not brown.
  2. Add the hot stock or water and simmer 10 minutes, then add the milk.
  3. Mix the flour to a smooth paste with a little extra milk, add to the pan slowly stirring the time until boiling again.
  4. Add salt and pepper and parsley; cook and stir 5 minutes.
  5. Add the cheese, stir and boil up again.
