Cheese Soup |

A great cheese soup recipe. |
Ingredients:- Butter or margarine
- Finely chopped onion
- 1 pint hot white stock or vegetable water or plain water
- 1/2 pint milk
- flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp chopped parsley
- -Grated stale cheese
- crushed cream cracker crumbs
Method:- Heat fat in soup pan, add the onion and fry until transparent but not brown.
- Add the hot stock or water and simmer 10 minutes, then add the milk.
- Mix the flour to a smooth paste with a little extra milk, add to the pan slowly stirring the time until boiling again.
- Add salt and pepper and parsley; cook and stir 5 minutes.
- Add the cheese, stir and boil up again.
