Broccoli Soup |

Receipe for Broccoli Soup. |
Ingredients- 1 tablespoon of butter
- 1 onion, finely chopped
- 1 carrot, finely diced
- 1 celery stalk
- 1 bunch of broccoli or 250 grams frozen
- 4 cups chicken stock
- Salt and a pinch of cayenne
- ¾ cup cream combined with 1 egg yolk.
Method- Melt butter and fry carrot, onion and celery until soft.
- Add broccoli and chicken stock, season with salt and cayenne, bring to the boil and then cover and simmer until tender.
- Puree soup in the blender and then return to the boil, mix in cream and egg yolk with a little of the soup - add to rest of soup.
- Heat gently.
