Broccoli Soup

Receipe for Broccoli Soup.

Ingredients

  • 1 tablespoon of butter
  • 1 onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk
  • 1 bunch of broccoli or 250 grams frozen
  • 4 cups chicken stock
  • Salt and a pinch of cayenne
  • ¾ cup cream combined with 1 egg yolk.

Method

  1. Melt butter and fry carrot, onion and celery until soft.
  2. Add broccoli and chicken stock, season with salt and cayenne, bring to the boil and then cover and simmer until tender.
  3. Puree soup in the blender and then return to the boil, mix in cream and egg yolk with a little of the soup - add to rest of soup.
  4. Heat gently.
