Black Bean Soup

Delicious and easy recipe for black bean soup.

What you need:

2 cans (16oz.) black beans (unseasoned)
1 cup chicken broth
1 small onion chopped or diced
1 tsp. minced garlic
1 16 oz. jar medium salsa
4 tsp. lime juice
2 tsp. cumin
12 cilantro leaves

Place one can of beans (do not drain) and broth in blender till smooth.

Coat saucepan with pam.

Cook onion and garlic.

Add blended bean mix, remaining can of beans (do not drain), salsa, lime, cumin, chopped up cilantro and boil.

Reduce heat to low.

Cover.

Cook 25 - 30 minutes.

This is a really quick and easy recipe. Great to have as leftovers over rice with chicken.
