African Stew for You

An exotic African Stew.

Try this exotic and spicy dish if you wish.

Ingredients:

  • 4 cups water
  • 3 chicken bouillon cubes
  • 1/3 cup curry
  • 2 T. granulated garlic
  • 2 T. ground and toasted coriander
  • 4 cups coconut milk
  • 1/3 cup sugar
  • 1/3 cups soy sauce
  • 2 pounds meat of choice or mix of meats.
  • 2 cups diced onions
  • 2 cups mixed diced peppers
  • ½ cup whole kernel corn
  • ¼ t. cayenne pepper
  • 2 T. cornstarch

Method:

In a kettle heat the water add chicken bouillon cubes, curry paste, toasted coriander, and the garlic. Let this boil then add in sugar and the milk. Next add the soy sauce and the meats. Let this simmer for 20 minutes. Once done simmering add in the vegetables, and spices. Now cook until tender. Bring all this to a boil then add in the cornstarch very slowly and whisk until it becomes thick.

Some changes may be made to taste such as removing peppers or cayenne. Will serve 16.
