Spinach, Mushroom and Tomato Risotto

I use Arborio rice in this recipe because it is extra starchy and results in an extra creamy Risotto. Regular rice can be substituted, but you will not get the same texture. Arborio rice has a firm interior like long grain rice, while the exterior is soft and creamy like a short grain.

Mangga or mango is a sour green fruit when unripe, and sweet and yellow when ripe. This is what we call the carabao mango or the International Manila Mango. When mangoes are in season, the Ybanag choose the mature and unripe one because of its sourness.

Once I learned how to cook this became one of my favorite dishes, it is high in carbs and is good for quick energy, I usually top it in sour cream and bacon bits. Prep Time: 20 Minutes Cook Time: 20 Minutes Yields about eight servings.
