The Best Potato Salad

This is my mom's recipe, and our family won't eat any other kind.

When you think of summer, what thoughts come to mind? Vacations, swimming, picnics, and family reunions. In my case, one thing that comes to mind is my mom's potato salad. If you ask any of my siblings, this is the best potato salad ever made. I've heard others who don't like potato salad that they really like this version. So here you go!

What you'll need:

 

  • 8 med red potatoes, cubed
  • 4-5 hard boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2/3 cup sour cream
  • 3 T sugar
  • 3 T cider or red wine vinegar
  • 2 tsp prepared mustard
  • 1 tsp celery seed
  • salt and pepper to taste

Method:

Place potatoes in saucepan and cover with water. Cover and bring to a boil; cook until tender, 15-20 minutes. Drain and cool. Place in a bowl add eggs. Combine mayonnaise, sour cream, sugar, vinegar, mustard, celery seed, salt and pepper. Pour over potato mixture and toss to coat. Cover and refrigerate 6 hours or overnight.

It is! It's almost got a creamier texture to it and it's not as mustardy as other potato salads I've had.
