Ingredients
- 2 Acorn Squash
- 1/2 cup Italian bread crumbs
- 5 strips chopped bacon
- 1/4 cup chopped red onion
- 1/4 cup chopped celery
- 1/4 cup shredded cheddar cheese
- 2 tsp. fresh thyme leaves
Method
- Cut squash in half and scoop out the center pulp.
- Coarsely chop the pulp.
- Cook the bacon until browned.
- Add the celery and onions and cook until tender.
- Add pulp and sicook for 2 more minutes.
- Remove from heat.
- Stir in bread crumbs, thyme, and cheese.
- Spoon mixture into shells of squash.
- Cook at 350 degrees for 20 minutes or until squash is tender and stuffing is hot.
