Sweet Southern Sweet Potatoes

A delicious alternative means of preparing this traditional holiday side dish.

Ingredients

  • 5 large sweet potatoes
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/2 cup orange juice
  • 1/2 cup glazed pecans

Preparation

  1. How you originally cook the sweet potatoes is a matter of personal preference. If you prefer to bake them until soft, first wash the sweet potatoes and scrub the skins well, then bake at 400 degrees for approximately 40 minutes.  Once baked, remove the skins, and cut into chunks.
  2. If you’d prefer to boil the sweet potatoes, peel first, cut into equal sized pieces, and boil for about 20 minutes or until cooked though and soft, and drain.
  3. In a large bowl, with a handheld mixer, on low speed, mash the sweet potatoes until smooth. Beat in honey, maple syrup and orange juice and mix well.
  4. Prepare a large baking casserole with non-stick spray just around the side. Spoon the sweet potato mixture into the casserole, and sprinkle the glazed pecans over the top. Bake at 350 for an additional 25 minutes, then serve.
