Ingredients:
- 1 Box corn muffin mix
- 6 yellow squash
- 1/2 onion (chopped)
- 1 tsp salt
- 1 tsp pepper
- 1 cup shredded cheddar cheese
Method:
- Boil squash 10 minutes or until tender
- Prepare corn muffins using instructions on box
- Remove seeds from squash
- Cut squash in half lengthwise
- Place squash middles in bowl
- Combine 5 crumbled corn muffins with onion and spices and 1/2 cup of cheese
- Place stuffing into squash halves and bake 10 minutes at 350 degrees
- Spread remaining cheese on top
- Place back in oven for 2 minutes or until cheese melts
