Kitchen Zen for Men: "Homemade" Butter

A heart-healthy alternative to regular butter, this recipe uses olive oil and creates a smooth soft-spread butter. Once you make this, you'll never use regular butter again.

This recipe creates a creamy, soft-serve butter that spreads easily and has heart-healthy mono-saturated fat as the main ingredient. My doctors are amazed at my cholesterol; my HDL is extremely high. I attribute this to using only olive oils when cooking and avoiding fast food and pre-packaged snacks at all costs. By making your own butter, you are taking the first step into a wonderful world of home-made goodness.

Ingredients:

  • 1 lb. salted butter
  • 2 - ½ cups classic olive oil
  • 1 tsp. kosher salt (optional)
  • Blender

Method:

Allow butter to set at room temperature until slightly soft. Place 4 sticks of butter (one pound) into your blender. Add the olive oil. Secure the lid in place and pulse until the butter begins to blend with the oil. Add salt, if desired. Increase the speed of the blender and blend until the mixture is smooth. Pour into a plastic tub. Secure lid on the tub and refrigerate. Now you can enjoy butter without guilt!

Alternate method: Extra-light olive oil works just as well as classic olive oil, but avoid extra-virgin olive oil - while it is excellent for many recipes, its strong flavor would overpower the butter in this application.

Note: My sister prefers to add salt to her homemade butter; but I have found that it tends to sink to the bottom of the tub, making the last past of the butter in the tub too salty. Salt is an important ingredient in butter, I would not use unsalted butter to make this recipe.
