Spiced Prawn Sambal

Sambal is used as a condiment or as a side dish, and is sometimes substituted for fresh chillies; it can be very hot for the uninitiated. It is available at exotic food markets or gourmet departments in supermarkets in numerous countries.

Ingredients:

  • 1 kilo big prawns
  • 1 teaspoon Fennel ( jintan manis )
  • 1 teaspoon Cumin ( jintan putih ) roast in dry pan , ground together.
  • 1 teaspoon Mustard seeds ( biji sawi ) slow hit for 1 min. ( A )
  • 2-3 Cardamon seeds
  • 1 small Cinnamon Bark
  • 3 -4 big onions
  • 1 cm dried turmeric root
  • 2 big tomatoes
  • 10 -20 fresh red chillies , ground together ( B )
  • 1 cm galangal root
  • 1 turmeric leaf
  • 1 teaspoon sugar
  • 100 g grated coconut - fry the coconut until brown and grind, smooth paste
  • 100 g petai
  • Salt - to taste

Method:

Heat oil, add ground ingredients A and B together, fry till fragrant.

Add in the grinded coconut, put prawns in sauce and stir until sauce thicken ,salt to taste and add in petai.
