A Spanish white rice topping. |
Ingredients-
1 can pigeon peas (15.5.oz)

1 1/2 cup chopped bacon
-
1 cup chopped red pepper,green pepper,onions,cilantro
- tomato paste
- adobo goya
- 1 pk sazon adobo
- 1 tsp. pasteurized garlic
- 2 green bananas- grated seasoned with adobo goya with pepper
Method- In a saucepan bring to boil over medium heat, 1 cup water,chopped bacon,red pepper green pepper,cilantro,cilantro,adobo,sazon,and garlic.
- When ingredients begin to boil add in pigeon peas.
- Boil an additional 15 minutes.
- Then you take your grated seasoned green bananas and roll them into balls into your hand and gently place them in saucepan with pigeon peas.
- When your grated bananas are solid add in your tomato paste.
- Mix your tomato paste in a corner until no longer visible in chunks.Let boil an additional 10 minutes.
- Pour over white rice.
- Makes 4 servings depending on how much your guest like on their rice.
