Saura's Gandules

A Spanish white rice topping.

Ingredients

  • 1 can pigeon peas (15.5.oz)
  • 1 1/2 cup chopped bacon
  • 1 cup chopped red pepper,green pepper,onions,cilantro
  • tomato paste
  • adobo goya
  • 1 pk sazon adobo
  • 1 tsp. pasteurized garlic
  • 2 green bananas- grated seasoned with adobo goya with pepper

Method

  1. In a saucepan bring to boil over medium heat, 1 cup water,chopped bacon,red pepper green pepper,cilantro,cilantro,adobo,sazon,and garlic.
  2. When ingredients begin to boil add in pigeon peas.
  3. Boil an additional 15 minutes.
  4. Then you take your grated seasoned green bananas and roll them into balls into your hand and gently place them in saucepan with pigeon peas.
  5. When your grated bananas are solid add in your tomato paste.
  6. Mix your tomato paste in a corner until no longer visible in chunks.Let boil an additional 10 minutes.
  7. Pour over white rice.
  8. Makes 4 servings depending on how much your guest like on their rice.
  9. Enjoy!!!
