Yield: 3/4 cup
Ingredients
- 1 bunch fresh cilantro
- 4 cloves of garlic
- 1 teaspoon sea salt
- 2-3 teaspoons ground cumin
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1/2 of a roasted red pepper
- Lemon juice
- 3 tablespoons olive oil
Preparation
Trim stems from the cilantro. Wash and dry cilantro and put tops in a food processor. Finely chop. Mix salt into garlic. Add garlic mix to cilantro with spices and roasted pepper. Blend all together. Sauce should have some texture. Remove the mixture to bowl and add in lemon juice and oil. Can be used as dipping. May remove pepper if you prefer. Makes about ¾ cup.
