Here again I say if you haven't tried it don't knock it. It is very good and a reckon is one of the cleanest animals in nature. This is another recipe a Navy buddy from down South who had a coon dog and loved to hunt gave me. It is darned tasty and if you ate it and didn't know what it was, I'll bet you would like it.
Coon and sweet potatoes
Ingredients:
- 1 coon
- vinegar
- salt and pepper to taste
- water to cover
- Cayenne pepper to taste
- 3 cloves of garlic, chopped
- 1 cup chopped celery
- 1 large onion,chopped
- 1 medium green bell pepper, chopped
- Shortening
- all-purpose flour
- 6 medium sweet potatoes
Method:
Dress coon and soak for 1 hour in a mild vinegar solution. Drain. Cut coon into serving size pieces. Salt and pepper the coon and cover with water. Add cayenne pepper, chopped garlic, celery, onion and green pepper and boil to partially tender. Remove from heat and drain. Brown the coon in a small amount of shortening, then place it in a roasting pan. Make a thin brown gravy with the flour and the drippings, pour over the coon in the roasting pan. Place peeled sweet potatoes around the coon and bake at 350F until the potatoes are done.
This is very good and I know there will be a lot of raised eyes when they see coon but like I said, if you haven't tried it, don't knock it. It is good.
