Pineapple Fried Rice

Not your ordinary fried rice.

SERVES 4

PREP TIME 12 minutes

COOKING TIME 5 to 10 minutes

Ingredients

  • ½ piece onion, chopped
  • 1 tablespoon garlic, minced
  • 1 teaspoon fresh turmeric, finely chopped
  • ¼ cup carrots, finely chopped
  • 1 teaspoon curry powder
  • 1/3 cup Chinese sausage, cut into small cubes
  • ¼ cup shrimps, finely chopped
  • ¼ cup green peas
  • 4 cups cooked rice
  • Salt and pepper to taste
  • 1 tablespoon sugar
  • 1 tablespoon oyster sauce
  • ½ cup pineapple tidbits
  • ¼ cup roasted cashew nuts
  • 1 tablespoon onion chives, finely chopped

Method

  1. Heat wok or pan. Heat oil and sauté first five ingredients. Add Chinese sausage and shrimps, and continue sautéing. Add pineapple tidbits and green peas, then the rice.
  2. Season with white pepper, salt, sugar and oyster sauce
  3. Garnish with cashew nuts and onion chives. For presentation, serve this in a hollowed out fresh pineapple bowl.
