Ingredients
- ½ piece onion, chopped
- 1 tablespoon garlic, minced
- 1 teaspoon fresh turmeric, finely chopped
- ¼ cup carrots, finely chopped
- 1 teaspoon curry powder
- 1/3 cup Chinese sausage, cut into small cubes
- ¼ cup shrimps, finely chopped
- ¼ cup green peas
- 4 cups cooked rice
- Salt and pepper to taste
- 1 tablespoon sugar
- 1 tablespoon oyster sauce
- ½ cup pineapple tidbits
- ¼ cup roasted cashew nuts
- 1 tablespoon onion chives, finely chopped
Method
- Heat wok or pan. Heat oil and sauté first five ingredients. Add Chinese sausage and shrimps, and continue sautéing. Add pineapple tidbits and green peas, then the rice.
- Season with white pepper, salt, sugar and oyster sauce
- Garnish with cashew nuts and onion chives. For presentation, serve this in a hollowed out fresh pineapple bowl.
