Mrs. Burks was my girlfriend's mom and she made this for my husband and I after we were first married. It is a classic dish that my family requests at every event. Mrs. Burks passed away about 15 years ago so I don't think she'll object to me calling this her casserole.
Ingredients
- One 9 x 13 casserole dish
- Oven Preheated to 350 degrees
- Ingredients:
- 1 lb chopped cooked broccoli
- 1 can cream mushroom soup
- 1/3 cup milk
- 1/3 cup mayonnaise
- 1 egg
- 1 cup shredded sharp cheddar cheese
- 1/3 cup soft (not melted) margarine OR cooking spray
- 1 cup bread crumbs, separated
- salt and pepper
Method
- Use margarine or spray to coat interior and sides of casserole pan
- Sprinkle some bread crumbs in to coat entire interior surface of pan
- Mix all other ingredients together in large bowl EXCEPT for remaining bread crumbs.
- Poor mixture into prepared casserole dish and top with the remaining bread crumbs.
- Bake in preheated oven for 35 to 40 minutes or until cheese is melted and casserole is bubbly and bread crumbs are browned.
- Delicious the first day, but absolutely delightful the second day!
- Can be prepared and refrigerated or frozen for a later date-better if cooked and cooled first.
