Ingredients:
- 2 unripe mangoes - peel and chop
- 1 cup water
- 2 tbsp oil
Ingredients for frying:
- 1 medium onion - haft and slice fine
- 4 cloves ( Bunga Chengkeh )
- 4 cardamoms ( Bunga Pelaga )
- 1 stick cinnamon (3cm length)
- 1 heaped dsp ginger strips
- 3 cloves - cut into strips
- 2 tbsp sultanas
- 1 tsp kunyit powder (turmeric)
- 4 tbsp sugar
- 1 tsp salt
- Mix 1 dsp tamarind pulp with 1 tbsp water to obtain juice
- 2 -4 red chillies cut into 2 cm pieces
- 3 green chillies
- 2 tsp chilli powder
- ½ tsp ketumbar powder (coriander)
Method:
Put chopped mango and water in a saucepan. Cook over low heat till it boils then remove
from heat. Heat oil, add ingredients for frying. When onions are a light brown, add garlic
and ginger strips. Fry till onions are brown. Add raisins, mango and liquid kunyit, sugar salt and thick tamarind juice. Cook over low heat for 10 minutes. Add fresh chillies, ketumbar and chili powder. Cook till of a thick consistency.
Adjust the amount of sugar and tamarind according to the sweetness of the mango.
