Ladies Finger Egg Masala Fry

Its an quick and different way too cook ladies fingers with egg.

Ingredients:

  • ¼ kg lady fingers (diced into quarter inch pieces)
  • 50g-onions(finely chopped)
  • 7 to 8 -Garlic cloves ( finely chopped)
  • 2 green chilies
  • ¼ tsp-Turmeric powder
  • 1 tsp- pepper powder
  • 3- Eggs
  • Salt to taste
  • 1 tbsp-oil
  • 1tsp- Urid dhal
  • ½ tsp-mustard seeds
  • ½ tsp-cumin seeds
  • A sprig of Curry leaves

Method:

  1. Heat the oil in a pan.
  2. Season urid dhal ,cumin season, and mustard seeds
  3. When the mustard seeds splutter, add the washed curry leaves, onions and sauté
  4. When the onions are golden and transparent had the finely chopped garlic and green chilles and continue to fry for an minute or two.
  5. Had the ladies fingers and fry on low flame till cooked . (don't had any water)
  6. When the ladies finger is three forth cooked ,add salt ,turmeric, pepper powder and when it is fully done ,add the well beaten eggs and fry till cooked and dry.
  7. This is very tasty accompaniment to rice or chapatti
