Grilled Ratatouille

Fat-free and delicious! Look like a gourmet chef when you present this dish for dinner or lunch.

Ingredients

  • ¾ pound eggplant, cut into ¼ inch slices
  • 1 medium Vidalia onion, quartered and seperated
  • 1 pint cherry tomatoes
  • ¾ lb. Mushrooms
  • 1 large red bell pepper, cut in 1 inch pieces
  • 1 medium yellow squash, sliced ¼ inch thick
  • 1 medium zucchini, sliced ¼ inch thick
  • ½ cup fat-free French salad dressing

Method of Preparation

  1. Prepare a medium-hot grill and lightly spray with nonfat cooking spray.
  2. Alternately thread eggplant, onion, tomatoes, mushrooms, red pepper, squash, and zucchini on 6 metal skewers; place on large platter.
  3. Pour salad dressing over vegetables and turn to coat well; marinate at room temperature 15 to 30 minutes.
  4. Place skewers on grill and cook 20 minutes, until tender and cooked through.
  5. Remove from skewers and serve with chicken, fish, rice, or potatoes.
