Grilled Ratatouille |

Fat-free and delicious! Look like a gourmet chef when you present this dish for dinner or lunch. |
Ingredients- ¾ pound eggplant, cut into ¼ inch slices
- 1 medium Vidalia onion, quartered and seperated
- 1 pint cherry tomatoes
- ¾ lb. Mushrooms
- 1 large red bell pepper, cut in 1 inch pieces
- 1 medium yellow squash, sliced ¼ inch thick
- 1 medium zucchini, sliced ¼ inch thick
- ½ cup fat-free French salad dressing
Method of Preparation- Prepare a medium-hot grill and lightly spray with nonfat cooking spray.
- Alternately thread eggplant, onion, tomatoes, mushrooms, red pepper, squash, and zucchini on 6 metal skewers; place on large platter.
- Pour salad dressing over vegetables and turn to coat well; marinate at room temperature 15 to 30 minutes.
- Place skewers on grill and cook 20 minutes, until tender and cooked through.
- Remove from skewers and serve with chicken, fish, rice, or potatoes.
