Have you ever wanted a recipe that would be amazingly fun to make with children? I think this is the ticket: making candy from a potato! Some children will not believe you. Others will think it gross enough they have to try it. While some will want to participate but then not want to eat it! No matter, it will be fun to try. There are always a lot of lessons to learn while working in the kitchen from measuring (math) to sanitation (health). Your kids will not know they are learning while they are having fun.
Peel and boil one medium sized potato. Let it cool. In a bowl, mash the potato and add a teaspoon of vanilla. To this, add powdered sugar, enough to make it a ball of dough. Using your hands kneed and blend the dough. On a flat surface, dust with powdered sugar and then roll out the dough to your desired thickness. Spread peanut butter evenly on top of the dough. Roll the dough up like a jellyroll and refrigerate so it can firm up. Once firm, slice into pieces and serve.

I imagine this would taste good dipped in chocolate! It would also make a great gift to give as a thank you present for family and friends. If your child is adventuresome when it comes to eating, you may want to try additional flavors like jams or jellies. Just keep in mind, these need to be kept refrigerated.
