Fresh Cut Cajun French Fries

Fresh Cut Cajun French Fries Served With Ranch or Blue Cheese Dressing.

Ingredients:

5 Whole Russet or Large Potatoes
3 Tablespoons Cajun Season
1 Cup Favorite Ranch Dressing ( Thicker the Better or Blue Cheese Dressing )
2-4 Cups Vegetable or Canola Oil

Directions:

Cut the Potatoes in ¼ - ½ Inch Round/Oval Pieces, Then Lay Flat and Cut into Strips, Now Soak the Potato Fries in cold water in a large bowl for about, while potatoes are soaking, heat oil in fryer or large pan to Med-High Heat, or 400 degrees, Do not overheat oil as oil will burn sometimes. Now Drain ALL water from the bowl containing the fries, and make sure you get all the cloudy starch water off of the fries. Now lay fries and Dry on Clean Towel until ALL the water is off. Once Pan is Heated Add Fries with METAL tongs and make sure they are submerged in oil for at least 10-15 minutes depending on desired crispness. Now add Your Dressing in a serving bowl and get a plate ready, Drain Fries from Oil in a Large METAL Strainer. Once Fries are drained from oil add the Cajun seasoning while moving around the fries for more consistent coverage. Dump fries onto a plate or serving basket, add the serving saucer of dressing and enjoy the best fries ever.
