Easy Sweet Potatoes and Pecans

This is a great recipe to imitate the sweet potato casserole popular at Thanksgiving, but easier and quicker.

This is a great recipe to imitate the Sweet potato casserole popular at Thanksgiving, but easier and quicker.

Ingredients:

  • 3-4 Sweet Potatoes
  • 1 tablespoon Brown Sugar (add one more tablespoon if you like sweet sweet potatoes)
  • 1 tablespoon Butter
  • 1/3 -1/4 cup pecan pieces or whole pecans chopped

Method

  1. Cut up sweet potatoes into chunky rounds and boil till tender ( about 10 minutes)
  2. When the potatoes are starting to feel soft, heat up a skillet on med-high and toast pecans, stir so they won't burn.
  3. When pecans start to brown up and have a nice, nutty scent, turn off heat.
  4. Drain potatoes and return to pot.
  5. Start to mash potatoes with a masher or fork, while still chunky add butter, brown sugar and pecans, mash up potatoes till butter is melted and ingredients are nice and mixed, viola!

Serve with green beans and hot bread or a grilled cheese.
