Easy Noodle Dish

There have been many times, when I find myself standing in the kitchen, rummaging the pantry or staring in the freezer, wondering, what am I going to fix for dinner?

One day I ran out to the store, not knowing what I was going to purchase. I walked aimlessly down a few aisles and picked up a can of soup. Not just any soup, Campbells’ Cream of Chicken Soup.

You know how you’re not really paying attention but half listening to others? I guess little trickles of conversation started playing around with this can of soup and quite by accident did this Noodle Dish come about.

It's been a Family favorite ever since. I used to make it ALL the time, however now it has become part of our Traditional Holiday food menu. It is in high demand, drooled over as it's prepared, sampled while still on the stove, tasted as it goes to the table and there are never any leftovers!

Ingredients:

  • 1 Large bag Egg Noodles
  • 1 Large family size Cream of Chicken soup
  • 2 Cans boned chicken -  do not drain the broth
  • 1 16oz container sour cream
  • 8oz Container Parmesan Cheese
  • 2 Bags shredded cheeses.  I use the blended mix of Parmesan, Provolone, Mozzarella and Romano. Sometimes you can find a mix with Asiago cheese.
  • 1 Cup Milk
  • This literally is an easy 2 pot process.

Method:

  1. In a large pot, boil the water and cook your noodles. Do not over boil, this will make them mushy.
  2. In another large pot, combine all other ingredients. Use the entire container of sour cream,  both bags of cheese.  I use the whole container of Parmesan cheese, but you can use less.
  3. By the time you get everything mixed and the cheese is melted, your noodles are done. Drain the noodles and combine sauce into noodles. The sauce will not look pretty.  It will be lumpy from the chicken, stringy from the cheeses…don’t worry. It’s supposed to look like that.
  4. You do not have to use name brand products, store brand is equally as good and cost less. Sometimes I use yolk-free noodles and there is no difference in taste.
