Today I want to write about something very special, it's Germanys most popular food and I wnt to give you my personal recipe for it! All the times that I cooked it here in the states everyone loved it, but it's really nothing that special or that hard to cook! So here is the recipe! Try it out! You gonna like it!
For about 6 people you'll need:
- 3-4 bags of sauerkraut (each 2 lbs.)
- about 0.5 lbs bacon
- about 0.5 lbs carrots
- 1-2 potatoes
- salt
- pepper
- lots of sugar
and that's how you do it:
before you start cooking, dice the carrots, potatoes and the bacon very fine so its ready when you need it (try and cut the potatoes as small as you can).
You take a big pot and put in the bacon and cook in on medium heat. You can cook it as long as you want, but it's gonna be soft in the end from the sauerkraut juice. So it good enough when the bacon is nice and brown.
And then put the carrots in with the bacon for a couple minutes. Then put in the potatoes and again cook it for a couple minutes.
While this is cooking open the Sauerkraut bags and drain the Sauerkraut and give it in the pot when all the Sauerkraut is in there you need to fill up with water but just so much that it is like a thick soup and not that the Sauerkraut is swimming in it.
Then salt and pepper and about 2-3 hand fulls of sugar, steer it up really good and then let it simmer for about 1-2 hours. Steer it every 30 minutes and try it and maybe you have to put some more sugar in it.
That's it. It's really not very hard, but maybe you gonna have to cook it a couple times to get it how you want it! Some people like more bacon or carrots, some like it sweeter than others, so maybe you have to try it a couple times!
Oh and the potatoes are just there to thicken up the juice a little so don't worry if you don't have any it tastes just as good without them.
And if you think you have enough sugar in it, just try and put a little more into the Sauerkraut, you'll see it's just getting better!
