Creamed Cucumbers

If you have an abundance of fresh cucumbers and don’t know what to do with them except make pickles, try this.

Ingredients

  • 4 lg. cucumbers
  • 1/2 to 1 pt. sour cream
  • 5 tbsp. mayonnaise
  • 1 to 1 1/2 c. water
  • 1/4 c. vinegar
  • 2 to 3 tbsp. sugar
  • 1/4 c. cream
  • Onion slices (optional)

Method

  1. Peel and slice cucumber.
  2. Soak overnight in salt water.
  3. Drain and rinse.
  4. Mix water, vinegar and sugar to taste.
  5. Add cream.
  6. Beat in sour cream and mayonnaise.
  7. Add cucumbers.
  8. Best if allowed to stand in refrigerator for a day before serving.
