Company Spinach-Cheese Casserole

A side dish that always shows up at our family get-togethers. If you like spinach and cheese, you'll love this!

Preheat oven to 350

  • 4 pkgs. Frozen Spinach
  • 4 cups Cheddar Cheese
  • 3 cups Monterey or Jack Cheese
  • 8 oz. Cottage Cheese
  • 6 Eggs, slightly beaten
  • 6 Tbsp Flour
  • Dash pepper
  • 6 Tbsp butter or margarine

  1. Cook spinach according to directions. DRAIN WELL – this is important!
  2. Melt butter or margarine in saucepan over med/low heat, stir in flour and dash pepper.
  3. Stir flour/butter mixture into spinach.
  4. Add eggs – stir well
  5. Mix in cheese
  6. Place mixture in large oblong casserole dish or glass cake pan
  7. Bake uncovered 35 minutes or so, until eggs are cooked and cheese melted
  8. Let stand a few minutes before serving

Serves 8 - 10

(For smaller version, cut recipe in half)
