Preheat oven to 350
- 4 pkgs. Frozen Spinach
- 4 cups Cheddar Cheese
- 3 cups Monterey or Jack Cheese
- 8 oz. Cottage Cheese
- 6 Eggs, slightly beaten
- 6 Tbsp Flour
- Dash pepper
- 6 Tbsp butter or margarine
- Cook spinach according to directions. DRAIN WELL – this is important!
- Melt butter or margarine in saucepan over med/low heat, stir in flour and dash pepper.
- Stir flour/butter mixture into spinach.
- Add eggs – stir well
- Mix in cheese
- Place mixture in large oblong casserole dish or glass cake pan
- Bake uncovered 35 minutes or so, until eggs are cooked and cheese melted
- Let stand a few minutes before serving
Serves 8 - 10
