Chive and Parmesan Potato Soufflés |

These individual soufflés are simple to make and go well with any meal. |
Ingredients- 2 lbs potatoes peeled and cut into pieces
- 2 tbsp chopped chives
- 3 egg yolks
- 6 egg whites
- 1/4 cup olive oil
- 3/4 tsp baking powder
- 1/4 cup Parmesan cheese
- Salt and pepper
Method- Boil potatoes in salted water until tender then allow to dry out a little on a turned off burner
- Beat potatoes with electric mixer until smooth
- Add Parmesan, chives, salt, pepper, baking powder and egg yolks and beat until fully mixed
- In a separate bowl beat egg whites until they start to are stiff
- Add egg whites to potato mixture by gently folding them in
- Oil 6 1 cup soufflé dishes and divide mixture between them
- Bake in pre-heated 400 degree oven for 20 minutes or until golden brown.

These sound really good. Knowing me though, they would end up being pancakes. I will try them and let you know what happens.
