Chive and Parmesan Potato Soufflés

These individual soufflés are simple to make and go well with any meal.

Ingredients

  • 2 lbs potatoes peeled and cut into pieces
  • 2 tbsp chopped chives
  • 3 egg yolks
  • 6 egg whites
  • 1/4 cup olive oil
  • 3/4 tsp baking powder
  • 1/4 cup Parmesan cheese
  • Salt and pepper

Method

    1. Boil potatoes in salted water until tender then allow to dry out a little on a turned off burner
    2. Beat potatoes with electric mixer until smooth
    3. Add Parmesan, chives, salt, pepper, baking powder and egg yolks and beat until fully mixed
    4. In a separate bowl beat egg whites until they start to are stiff
    5. Add egg whites to potato mixture by gently folding them in
    6. Oil 6 1 cup soufflé dishes and divide mixture between them
    7. Bake in pre-heated 400 degree oven for 20 minutes or until golden brown.

      These sound really good. Knowing me though, they would end up being pancakes. I will try them and let you know what happens.

      I am with Darlene. My souffles' always end up flat. This sounds like one to try though.
