Blackberry Buckle - Side Dish

This would go good with any dinner as a side dish. This will serve about 9.

This would be good to add to a Thanksgiving dinner or Christmas dinner.

Blackberry buckle

Serves 9

Ingredients

  • ¼ Cups margarine
  • ½ Cups sugar
  • 1 Egg, well beaten
  • 1 Cup of all-purpose flour
  • 1 ½ Teaspoon of baking powder
  • 1/8 Teaspoon of salt
  • 1/3 Cup of fat free milk
  • 1 Teaspoon of vanilla
  • 2 Cups of blackberry topping

Topping

  • ¼ Cup of sugar
  • 2 Tablespoon of margarine
  • 2 Tablespoon all-purpose flour
  • ¼ Teaspoon cinnamon

Now cooking to start

  1. Preheat oven to 375 degrees F
  2. In medium mixing bowl, cream margarine and sugar until light and fluffy.
  3. Add Egg and beat well
  4. Sift together the flour, baking powder, and salt.

Add vanilla to milk

  1. Add liquid and dry ingredients alternately to creamed mixture, beginning and ending with dry ingredients.
  2. Pour batter into a greased and floured 9 x 9" pan. Cover with blackberries.
  3. Bake buckle for 40 minutes or until cake test done.
  4. Serve while warm with whipped cream or ice cream.
