This would be good to add to a Thanksgiving dinner or Christmas dinner.
Blackberry buckle
Serves 9
Ingredients
- ¼ Cups margarine
- ½ Cups sugar
- 1 Egg, well beaten
- 1 Cup of all-purpose flour
- 1 ½ Teaspoon of baking powder
- 1/8 Teaspoon of salt
- 1/3 Cup of fat free milk
- 1 Teaspoon of vanilla
- 2 Cups of blackberry topping
Topping
- ¼ Cup of sugar
- 2 Tablespoon of margarine
- 2 Tablespoon all-purpose flour
- ¼ Teaspoon cinnamon
Now cooking to start
- Preheat oven to 375 degrees F
- In medium mixing bowl, cream margarine and sugar until light and fluffy.
- Add Egg and beat well
- Sift together the flour, baking powder, and salt.
Add vanilla to milk
- Add liquid and dry ingredients alternately to creamed mixture, beginning and ending with dry ingredients.
- Pour batter into a greased and floured 9 x 9" pan. Cover with blackberries.
- Bake buckle for 40 minutes or until cake test done.
- Serve while warm with whipped cream or ice cream.
