Trying to get some children to eat salad is like trying to get them to do homework, or make sure their dirty clothes make it into the laundry hamper. With this tasty dinner salad, not only will they eat without scolding, they will request it again and again!
Ingredients:
- 1 head of fresh romaine lettuce , chopped Or one bowl of mixed baby salad greens
- 1 seedless hothouse cucumber, sliced
- 2 tomatoes, quartered and sliced again
- 1/2 cup smoked gouda cheese, chopped into pieces
- 1/2 cup dried cranberries or "craisins', either regular or cherry flavor
- 1/2 cup glazed pecans
- 1 cup cubed cooked chicken (try using sliced deli turkey, it makes a great substitute!)
- Raspberry walnut vinagrette ( availble in your salad dressing aisle at all supermarkets)
Method:
Toss lightly all ingedients, and add vinagrette dressing to taste. This salad serves well as a main course, or as a traditional salad. Experiement a bit, too, it is also delicious with shrimp, artificial crabmeat and more.
