The Best-Ever Chicken Salad

I have to admit I stumbled upon this recipe purely by trial and error. My kids absolutely fell in love with it. It is easy to prepare and provides a protein-enriched lunch for the whole family.

Ingredients

  • 2 hard boiled Eggs
  • 2 skinless boneless chicken breasts
  • ¼ cup of Mayonnaise or Salad dressing
  • 1 tablespoon of Dijon mustard
  • 2 green onions Chopped
  • Pinch of salt
  • Pinch of pepper
  • One diced tomato

Preparation

  1. Poach the chicken breast until they are well cooked. I recommend poaching the breast as it makes it easier to chop them up, without drying the outside of the breast.
  2. Chop the hard boiled eggs and chicken breast in a blender then add to a mixing bowl.
  3. Add onions, tomatoes, mustard, mayonnaise, salt and pepper.
  4. Let cool in fridge for about one hour.

Now with your favorite bread, add lettuce and spread evenly to make yourself the best ever chicken salad sandwich. You can try variations if the mood strikes you as well, add some bacon or extra tomato. Have it toasted or plain, makes a great late night snack as well.
