Summer Mexican Bean Salad |

A healthy summer salad, full of fresh vegetables, with a Mexican twist. This salad is perfect by itself or served as a chunky salsa with corn chips. |
Ingredients:- 2 Cans black beans.
- 1 Green pepper.
- 1 Medium onion.
- 3 Roma tomatoes.
- 1 Can whole kernel corn.
- 2/3 Cup fresh cilantro leaves.
- 1 lime.
- 1/2 tsp. salt.
- 1 tsp. Fresh-ground black pepper.
Method:- Drain and rinse both cans of black beans. Place in a large bowl.
- Finely dice the green pepper, onion, and tomatoes. Add to the bowl with the black beans.
- Drain any liquid off the corn and add to the other ingredients.
- Finely chop the cilantro leaves and add.
- Cut the lime in half and squeeze the juice from both halves into the other ingredients. If you have a citrus juicer, you can use it as well.
- Mix in the salt and pepper, and stir all the ingredients together. Add additional seasonings to taste.
