Summer Mexican Bean Salad

A healthy summer salad, full of fresh vegetables, with a Mexican twist. This salad is perfect by itself or served as a chunky salsa with corn chips.

Ingredients:

  • 2 Cans black beans.
  • 1 Green pepper.
  • 1 Medium onion.
  • 3 Roma tomatoes.
  • 1 Can whole kernel corn.
  • 2/3 Cup fresh cilantro leaves.
  • 1 lime.
  • 1/2 tsp. salt.
  • 1 tsp. Fresh-ground black pepper.

Method:

  1. Drain and rinse both cans of black beans. Place in a large bowl.
  2. Finely dice the green pepper, onion, and tomatoes. Add to the bowl with the black beans.
  3. Drain any liquid off the corn and add to the other ingredients.
  4. Finely chop the cilantro leaves and add.
  5. Cut the lime in half and squeeze the juice from both halves into the other ingredients. If you have a citrus juicer, you can use it as well.
  6. Mix in the salt and pepper, and stir all the ingredients together. Add additional seasonings to taste.
